Is there a simple way that I can stop the two packs overriding?

Nope, because those cars are using same basenames. You gotta either use this one or that one ;) or you can do like I did, and make few different copies of MM2 on your PC that have different mods :P

The file might be locked so dunno if you can, it requires renaming all of the car files

Which files do I need to rename?

When I rename them could it be any letter or number?

All the same mods of the cars in the two packs, stock and tuned, use the same basenames. That makes them impossible to be used all at the same time in-game.
A solution is to rename all the basenames of one of the two packs, and it takes some time. You can just add a number at the end of each basename, for example. You have to rename the basename written in the file names present in all the folders except the Aud and Texture ones. You can do this directly in WinRar.

Also remember to edit the basename inside tune/carname.info file

You have to change every files basename. Say you have Car1 and you want to change it to Car2. You have to change the basenames of every file that starts with Car1 to the basename Car2 in EVERY folder, as well as the writing in the tune file in the first pocket of the tune folder and also possibly inside the cardata audio excel files
