Good for you to start with make a car for MM2, by converting a model. Interesting car.
However, the start isn't good, you have to assign the textures to the materials and see how all this is made before uniting and do objects naming. You have to kinda study the model, and the splitting per materials is needed for this.

Might take me a few days to give an update, as is it's quite tough to learn all the texturing when you're eleven

You don't need to remap the textures.
Just assign the texture in the material editor.
Forza 3 models are already maped.

When you're using Riva's FM3 Rip Models, it's easy to assign textures.
In my style, You just have to make a new folder (Name it what you want. Example: Lambo Miura). Extract the compressed file of the model with the textures to that folder you have just created.
Then open the .z3d file of the car (I usually use 2.0.8 version first in converting) then boom. The zmod will automatically assign the right textures to the right materials.
After that, you just have to remember it all what are the right textures to its corresponding materials.
Then make another new folder (Inside the folder that you just have created. I mean inside the folder named Lambo Miura).
Name that new folder as TEXTURE.
Then select all .tga textures, right click, select Cut.
After that, go to the folder named TEXTURE. Paste all the .tga textures.
Open again the .z3d file of the car and re-assign the textures to the right material.

There are other several ways to do it in easy way.
Well that procedure I've mentioned above was my own way.
Just sharing. :)

If it's one of "NEW" rips by riva the materials are "messed up" use riva's tutorial how to rip forza 3 cars to see the materials and how to split them in categories , if it's one of the "OLD" rips by riva then just press "E" and assign the textures they have the right names and don't really need something special ;) for more help contact me with PM ;)

I did try the Material Editor once, and all textures look fine, except for the wheel.

Try the other texture of the wheels/rim.
Sometimes "trial and error" is needed.

The correct texture i think is WHEELA0.TGA, which may also have some issues
