in the way there is the yahoo messenger, msn messenger, etc., in the profile options, u should add an option for gtalk too.

I don't know if is possible add a new field also for the Google Talk contact. DjDecibel would be able to do that.
However, the phpBB forums don't have it by default, there are only the ICQ, AIM, MSN and Yahoo ones.
