You can get that widescreen resolution with this tool available since many years. All it's in the change of one file, and also, editing it manually you can potentially set any resolutions screen that you want.

MM2 is capable to handle player vehicles with a such polygons counts, there are already similar high polygons vehicles available since years, like this one.
Would be better look for alternative 3D models of the same cars with less polygons, though, for various reasons.
